How to Make Honeycomb Candy at Home

Honeycomb candy is made from just three things: boil sugar with golden syrup (or corn syrup) to the hard-crack stage of about 149-154 C (300-310 F), then whisk in baking soda off the heat so the mixture foams up, and immediately pour it into a lined tin to cool into an airy, crunchy honeycomb.

  • Use a pan several times larger than the syrup volume because the mixture triples or quadruples in size when the baking soda is added.
