Why Is Toffee Harder Than Caramel?
Toffee is harder than caramel because it is boiled to a higher temperature, the hard-crack stage (about 300-310F / 149-154C), which evaporates almost all the water and leaves a glassy, brittle sugar structure, whereas caramel stops at a lower, wetter stage and often contains cream, so it stays soft.

- The final texture of any boiled-sugar candy is set mainly by its cooking temperature, which corresponds directly to how much water is left in it.
- At the hard-crack stage almost no water remains, so cooled toffee behaves like a brittle amorphous sugar glass that shatters.
