Why Is My Sticky Toffee Pudding Not Sticky?

Sticky toffee pudding turns out not sticky when there is not enough toffee sauce soaking into the sponge, when too few or under-softened dates leave the crumb dry, or when the sauce is too thin or poured over a cold pudding instead of a warm one.

What it means

  • The stickiness comes mainly from the toffee sauce, not the sponge itself.
  • Too few dates, or dates not soaked soft, gives a drier, less moist crumb.
  • Pouring hot sauce over a warm, poked sponge lets it soak in for that sticky texture.

Action steps

  1. Use plenty of soft, soaked dates such as Medjool in the batter.
  2. Make a proper toffee sauce with butter, brown sugar and cream simmered until it coats a spoon.
  3. Poke holes in the warm sponge and pour over hot sauce, letting it soak in.
  4. Reserve extra sauce to spoon over each serving.

Risks & deadlines

  • Overbaking dries the sponge, so pull it as soon as a skewer comes out clean.
