Why Does Toffee Separate Into Layers While Cooking?

- Toffee is an emulsion of butterfat held in a hot sugar syrup; when that emulsion breaks, the butter pools out as an oily layer on top.
- The most common triggers are excessive heat, a too-rapid temperature rise, and inadequate or inconsistent stirring.
- Very high butter-to-sugar ratios and adding cold ingredients mid-cook also make separation more likely.
