Because it is low in moisture and high in sugar, hard toffee keeps well, generally staying fresh for one to two weeks at room temperature in an airtight container, and often longer. Its main enemies are humidity, which makes it sticky, and heat, which can soften chocolate coatings, so cool, dry, airtight storage is best.
Room-Temperature Storage
Store toffee in an airtight container away from heat and humidity, ideally with parchment between layers to prevent sticking. Kept dry and cool, plain hard toffee can remain good to eat for several weeks.
Freezing and Make-Ahead
Toffee freezes well when wrapped tightly and sealed against moisture, making it a good make-ahead treat for holidays and gifts. Let frozen toffee return to room temperature while still sealed to avoid condensation on the surface.
