What's the Difference Between Hard and Soft Toffee?
The difference is almost entirely how hot the sugar is cooked — hard, brittle toffee is boiled to the hard-crack stage (about 300-310 degrees F / 149-154 degrees C) so nearly all the water cooks off, while soft, chewy toffee is stopped earlier at the firm- or soft-ball stage (roughly 245-250 degrees F) so it keeps more moisture and stays pliable.
