Why Does Toffee Get Hard? Understanding Texture Changes
Toffee gets hard because boiling it to the hard-crack stage (about 300-310 degrees F / 149-154 degrees C) drives out nearly all the water, so as it cools the concentrated sugar sets into a rigid, glassy amorphous solid rather than staying a soft syrup.

What it means
- As sugar syrup boils, water evaporates and the sugar concentration climbs; the higher the final temperature, the less water is left behind.
- At the hard-crack stage the candy holds only a couple of percent water, so it can no longer flow and instead freezes into a brittle glass as it cools.
- This glassy sugar is amorphous (non-crystalline), which is why well-made toffee is clear and snaps cleanly instead of being grainy.
- If it cools slowly or picks up moisture from humid air, that sugar glass can soften or turn sticky over time.
